Healthy Recipe – Ingredients for the Grilled Salmon with Lemon Dill Sauce and Quinoa Salad:

For the Grilled Salmon:

– 4 salmon fillets (4-6 oz each)

– 1 tablespoon olive oil

– 1 teaspoon lemon zest

– Salt and pepper to taste

 

For the Lemon-Dill Sauce:

– 1/2 cup plain Greek yogurt

– 1 tablespoon fresh dill, chopped

– 1 tablespoon lemon juice

– 1 garlic clove, minced

– Salt and pepper to taste

 

For the Quinoa Salad:

– 1 cup quinoa, rinsed

– 2 cups water or low-sodium vegetable broth

– 1/2 cup cherry tomatoes, halved

– 1/2 cucumber, diced

– 1/4 cup red onion, finely chopped

– 1/4 cup fresh parsley, chopped

– 2 tablespoons olive oil

– 1 tablespoon lemon juice

– Salt and pepper to taste

 

Instructions:

  1. Prepare the Quinoa Salad:

– In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

– Let the quinoa cool slightly, then transfer to a large bowl. Add cherry tomatoes, cucumber, red onion, and parsley.

– Whisk together olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the quinoa salad and toss to combine. Set aside.

 

  1. Prepare the Lemon-Dill Sauce:

– In a small bowl, mix together the Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Adjust seasoning to taste. Refrigerate until ready to use.

 

  1. Grill the Salmon:

– Preheat the grill to medium-high heat.

– Brush the salmon fillets with olive oil and sprinkle with lemon zest, salt, and pepper.

– Grill the salmon for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
