  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 1 cup green beans, chopped
  • 1 cup spinach leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Sauté the Veggies: Heat the olive oil over medium heat in a large pot. Add the onion and garlic, cooking until soft and fragrant (about 3 minutes).
  2. Add Vegetables and Broth: Stir in the carrots, celery, zucchini, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
